I myself don't have experience yet in actual building, I'm still making my blocks but I'm just about ready to start on my first project - a new home for my chickens.
What size will the dwellings be?
I don't know about flexible papercrete, others here may have already posted, I get the digest so I don't see new posts from the day until late at night, but I would think if a large sheet of papercrete is made around a 3 - 4 inch thickness it might be a little flexible, but I think it will crack or break if you tried to flex it too much. With various recipes including the paint you mentioned, experiment and see what you get.
Another option, that may have already been mentioned, is to pour wet papercrete over a domed wire mesh frame, the water will drain out leaving a solid roof. You could even use bamboo or branches instead of wire. I may experiment a bit with this on the roof of my chicken's house, or I may just use thick blocks for insulation. Here in the Southwest desert it gets extremely hot in the summer and I want the roof to be a thick as possible.
Also, have you thought of using cob instead of papercrete?
