Also they will be heavy and chunks will break off. If you haven't started making them yet and insist on uniform blocks you should make a form that will produce the desired result. I would say individual rectangles into which you pour the slurry. Then you have a piece of plywood or something that fits right down inside the form and apply some pressure. I wouldn't worry about the block sticking to the form if your form material is smooth. Papercrete doesn't like to stick to anything but itself.

The issue I see with cutting them partially dried is that they are not done shrinking yet.
One of the primary reasons (but not the only reason) for cutting blocks is to get a consistent size and shape. If the blocks are going to still shink after cutting, cutting them while partially dried partially defeats that advantage for cutting them in the first place.
