The shininess goes away, it gets dull and/or even whitish. The zinc coating (galvanize coating) is there to prevent rust, but yes it will eventually oxidize enough that it no longer protects the steel. The ideal exposure time would of course vary with your weather conditions.

I used weathered galvanized stucco mesh as one side of slip forms for papercrete. After several years there is no visible reaction. YMMV
