I can see the wooden pulley as a large diameter shaft pulley like he did, but notice the motor pulley is not wooden. The shafts of that apple grinder are all wood and in a low speed application. In the end he replaced the pulleys and motor with a hand crank.
It would be simple enough to glue a block of wood on the motor shaft, turn it on, and use a blade to form it into a v-profile, a poor man's improvised lathe. You'd probably want some really hard and strong wood for that. I think a mass of wood for strength would be needed.
I'm sure I have a larger metal pulley for the motor, just not a 1" diameter like the one that is on it. Another alternative might be to use some epoxy to modify that flat belt pulley to have a V profile. First I'll try to find something suitable rather than reinvent the wheel. Doubling the RPM of the blades is probably not going to be an issue, they spin nicely at 200 rpm and should also at 400 rpm or so.
I have a few small pieces of packing EPS, but not enough to bother with. I don't think I'll be grinding EPS in this machine any time soon unless I toss a piece or two into a pc mix just for fun.

It is a rather simple task to make your own V-Belt pulley out of wood. Yes, Wood. You have a table saw right? Check out this website. One of the best websites out there. http://woodgears.ca/cider/motorizing.html Matthias Wandel is what we called as I was growing up, "A Dude..... A righteous smaaaaart DUUUUUUDE!!!" If you paint your wooden pulley with a waterproof sealer, it should be able to withstand the wet environment. If you ever attempt to use that thing to grind up styrofoam, better put a lid on it. Those little bits of foam will pick up static electricity, stick to everything, and you'll soon be walking around looking like the abominable snowman.
