The first couple of years we did fine with this operation, but one year we were in a hurry to get the apples up and started the process earlier. It was warmer outside and on the second batch the disposal overheated and shut down. Because it is thermally protected, we waited awhile and started again. Eventually it burned the motor up and precipitated a unit change.
If someone does try this you may need to use very cold ingredients (ice water) to make it work for very long.

On the subject of unused appliances, one person did mention using a garbage disposal hooked to an outdoor sink to pulp paper.
