Question how much shrinkage are people seeing when papercreting up (as
infill) to a beam? Any suggestions on how to finish this last gap?

Make some small precured blocks, or blobs, and stuff them in to the
crevices. or just stop at a certain pint near the roof beam, and make
precured blocks the just slide in to the space with a little wet
mortar. if you have bad weather, then premaking blocks in sunny
times, and just loading up the framed walls can serve you well. and no
worry over long cures, mold, wet drainage down into the already
drying wall.
