This is just thinking out loud because I also off and on think of slip forming between two hard surfaces.
What if you picked up an old vacuum pump (look in old dairy barn milk rooms) if you pour in what 2’? lifts and drill a bunch of holes in ½ inch abs pipe. Make up a header and shove pipes into the pour. Hook up the vacuum and draw moisture out? When dry pull the pipe the next pour will fill the holes and if it dose not it dose not matter it will be a sealed air space.

Hi Rick, welcome to the group.
My biggest concern with your scheme is drying time. Pouring between two rock walls, with presumably a sealed footer, would not allow the papercrete to drain as it must, and then having most of the surface of the papercrete covered with rock facing would not allow the water to evaporate. It may take several lifetimes to finally dry out and give you the insulation you are looking for.
