As I said, depending on the software you are using. I usually use Nero 8, and it will reprocess the video to get the best quality it can fit on a DVD. Sometimes I can get a DVD in as little as 1 1/2 hours, other times it takes up to 8. And that's on a 3GHZ confuzer.
For selling the videos online as a download there would be no reason to burn it, but many people would prefer a hard copy on DVD so I can see a need to burn at least some of the time.
