Exactly. The sourdough bread I make is probably based on the same yeastie beasties that were in the pc. They were collected in the same area, within about 50'.

I let a full mixer without cement sit in 100 degree weather for a few days in the summer. It was pretty aromatic and had bubbles. Not a bad smell, kinda like sourdough starter. As you experienced, it seemed to work well, and was lighter - no doubt due to the bubbles. I don't remember where that batch ended up, but no problems ever came of it after several years.
