The difference between papercrete and sprayed cellulose is the amount of water in it. Sprayed cellulose (when correctly applied) is just barely damp when it hits the structure. The way most of us make papercrete, it's runny wet. Seems like all that water would buckle your sheathing. OSB doesn't like prolonged water contact. Plus, where would the excess water drain to if you sprayed in?That said, I know that you have a lot of experience with spraying PC. Sprayed papercrete works great. When they spray cellulose insulation the sprayer mixes either water or an adhesive with the hammer milled paper. You'll get pretty much the same effect - except - you can't build up too fast or you risk the whole thing sliding off and onto the floor. I think sprayed cellulose would be a lot lighter than papercrete that is wet enough to spray. It is painful to spray and build up for several hours and then have it slump.
Mesh on the ceiling would give additional support to the first layer. After that the layers are adhering to each other. What are you spraying onto, OSB? I definitely would not recommend spraying onto drywall, though I have never tried it. I imagine it would make a mess since sheetrock and water don't play well together.
Greg's idea of panels is also good. Make them over sized and then after they are thoroughly cured trim them for a snug fit.
