Subsituting sand for clay soil will change the properties. The wet
slurried clay soaks into and coat the paper fibers. The sand will
not. If you don't want to use clay, upping the portland will "kinda"
act like a substitute there are other substitutes too.
However. This may or may not be what you are looking for. Don't
hesitate to try it as you suggested. What you posted looks like a
viable recipe for your application to me, but I can't say I've tried
exactly that mix. Just because it produces something different from
what Chris is doing doesn't mean it won't work well for your
application. If you do not like the results, try again with a
different recipe.
Please keep posting about your progress and your results. (Pictures
would be good too.) If you don't like what you get with your first
bucket, many of us will be happy to help you tweak a recipe to fit
your needs.
Safety tip: Using a bucket technique with a sharpened blade has
risks. Wear heavy work boots and check the condition of your
buckets.

to build a decorative nonload-bearing wall sort of around the
perimeter of the "yard" part of the property. I'll need a lot of
blocks.
