I spent a week in Hawaii in February.  I never saw condensation on anything . . . except the mirror in the bathroom after I showered. 

 

Surface condensation occurs when there is a specific different between air temperature and surface temperature at a given relative humidity. 

 

Here's a much better explanation of surface condensation.  It's computer, not house related but the science is the same.
